Mediterranean Seafood Salad
Ingredients (server for 4)
Extra Virgin Oliver Oil 3tbsp
Balsamic Vinegar 3tbsp
King Prown 400g
Scollop 200g
Squid 200g
Pepper 100g
Onion 100g
Asparagus 150g
Aloe Vera 150g
Fresh Oregano 5g
Cheery Tomato 100g
Fresh Radicchio leafs washed and dried

Chop pepper and onion, we’ll leave them on the side, to use later.

Clean and wash the seafood thoroughly.

Bring a pot of water to the boil, season with salt, lemon juice and few drops of white wine, add the king prawns, squid and scallops, cooking for about 4 or 5 minutes. Drain and refresh in iced water.

Use a separate pot to boil the asparagus, when it’s cooked, drain and refresh in iced water as well, to keep it crispy/crunchy.

Slice fresh skinless aloe vera to strips, and then put into boiling water, use a slotted spoon, remove aloe vera out of the pot.

In a bowl combine the seafood, vegetables and radicchio leafs all together, seasons with lemon juice and sea salt. Whisk in extra-virgin oil and balsamic vinegar, toss with seafood salad. Sprinkle chopped oregano on the top.
